SMOKED SALMON, AVOCADO AND ARUGULA SALAD

The perfect light lunch using our award winning smoked salmon
smoked salmon salad

Salad

  • 1 1/2 avocadosliced
  • 1 pearsliced
  • 1/2 red onionthinly sliced
  • salt and pepper

Sauce – Champagne Vinaigrette

  • 1/3 cup Champagne vinegar
  • 2 tsp Dijon mustard
  • 1 lemonjuiced
  • 1 small shallotfinely diced
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup olive oil

Salad:

  • Add all of the ingredients to a bowl and drizzle with the Champagne Vinaigrette. Gently toss together and serve immediately.

Sauce

  • Add all of the ingredients except the olive oil to a mixing bowl and whisk together. Slowly add the olive oil and whisk vigorously until the dressing is combined.
