SMOKED SALMON, AVOCADO AND ARUGULA SALAD
The perfect light lunch using our award winning smoked salmon

Salad
- 4 cups arugula ( Can use spinach for a milder taste
- 1 cup microgreens
- 200g of Quinlan’s smoked salmon, torn into pieces
- 1 1/2 avocado, sliced
- 1 pear, sliced
- 1/2 red onion, thinly sliced
- salt and pepper
Sauce – Champagne Vinaigrette
- 1/3 cup Champagne vinegar
- 2 tsp Dijon mustard
- 1 lemon, juiced
- 1 small shallot, finely diced
- 1 tsp honey
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 cup olive oil
Salad:
- Add all of the ingredients to a bowl and drizzle with the Champagne Vinaigrette. Gently toss together and serve immediately.
Sauce
- Add all of the ingredients except the olive oil to a mixing bowl and whisk together. Slowly add the olive oil and whisk vigorously until the dressing is combined.
