Quinlan's Crab Salad
Perfect for a Light & Refreshing Lunch

- 200g of Quinlan’s Crab Meat
- 2 tbsp of mayonnaise
- 1 lemon
- 10g of chopped onion
- 2 vine tomatoes
- 1 avocado
- 1 tbsp of finely chopped red onion
- 10g of basil
- chopped chives
- Place the mayo in a bowl, add the zest & juice of half a lemon, chopped chives, salt pepper and mix well.
- Fold in the crab meat
- For the salsa, dice the tomato and avocado and mix in the bowl with the red onion, chopped basil and a squeeze of lemon juice.
- Lay a mousse ring on a plate, add 2cm of salsa.
- Add the same amount of crab mixture.
- Lift off ring and serve with a dressed salad
