Pan fried Scallops with chilli

Pan fried Scallops with chilli, ginger and soy dressing.

Serves 2 as a starter

Preparation time 2 – 4 mins

Cooking time 4 – 5 mins.

Ingredients

6 scallops

2 tablespoons light soy sauce

½ red chilli – diced fine

1 small piece fresh ginger – grated or finely diced.

1 teaspoon olive oil

Method

1. Heat oil in a non stick frying pan.

2. Add scallops and fry over a medium heat for 2 minutes on each side.

3. As they are cooking mix soy sauce, chilli and ginger in a bowl, and then add to the frying pan for the last 30 seconds of cooking.

4. Remove scallops from the pan and serve drizzled with the soy dressing.
